I need a step by step for a good Pot Roast/Stew?

I'm not really sure what it would be called. My mother called it Pot Roast, but she only spoke Italian and very little English, so I dont know if thats right. I'm looking to make a stew with potatos, carrots and meat on the stove (no slow cooker). But I am not sure where to start or even what type of meat to get.
